No more roux. Just use 1.25 cups of liquid (milk, water, cream, beer, wine) and 2.25 teaspoon of sodium citrate. Season however you want (Old Bay, mustard, hot sauce, taco seasoning, nutmeg, what ever you like) just taste for salt.

-1 lb elbow noodles

-1.25 cups of liquid

-1 lb shredded cheese (we use white cheddar and I like the one from BJ’s)

-seasoning (we use dijon mustard, white pepper, touch of cinn. or sometimes just taco seasoning)

Cook macaroni as directed. Heat liquid on low add sodium citrate, slowly add cheese and stir. Mix in cooked pasta.

DONE! Well maybe not. We mix panko bread crumbs with melted butter. Spread crumbs on top and bake.

-you can pour mixture in pan, top with crumbs and cook later
